Never played a Souls-like game before. Where to start?

I'm thinking of starting to get acquainted with this genre, what do you recommend? I've never played a game that focuses only on killing bosses, but I think I'm ready. However, I don't want to kill the whole mood to play if I choose a game that is too hard for a newcomer to this genre
